Meatless Monday: Pepper Jelly Cheese Spread


2 cups chopped Pecans
2 cup shredded Cheddar Cheese (or Vegan Cheese)
1 cup chopped Green Onions (white and green parts)
Mayonnaise (or Vegenaise) to taste
Pepper Jelly


Mix pecans, cheese and green onions with enough mayonnaise for a spreadable consistency (about 5 Tbsp.) Press into dish and refrigerate. Just before serving, spread with pepper jelly. Serve with crackers.
